Guilt Free Popcorn

By accident we learned that Olive Oil goes better with Popcorn than Butter. Good thing we ran out of butter one movie night and we were too lazy to get up the couch and go to the store.

This is also way better than Microwavable popcorn.


Ingredients:
l cup Popcorn
5 tablespoon Olive Oil
salt

Directions:
1) In a covered 3 gallon pot, heat 5 tbsp of olive oil with 3 kernels of corn on a medium-high heat.
2) When the kernels pop, add 1 to cups of corn kernels.
3) Turn heat down to medium.
4) Shake the pot every 30 to 45 seconds.
5) When the kernels start to pop, shake the pot every 10 seconds until the kernels pop 1-2 seconds apart.
6) Salt to taste

Enjoy a healthy snack!

Roast Chicken Drumsticks with Parsley & Garlic

Olive Oil and Butter.....the best way to fry chicken.





Ingredients:

1 tablespoon Olive Oil
2 tablespoons Butter
12-16 Chicken Drumsticks
1 Garlic Clove, 
finely chopped

4 tablespoon fresh parsley, chopped

3 tablespoon Lemon Juice


Directions:

1) Heat frying pan over a moderate heat. Add the oil & half the butter.
2) Season the drumsticks with salt & pepper. When the butter is foaming, drop in the drumsticks, and fry until lightly browned all over
3) Cover the frying pan with a lid and leave the drumsticks to fry gently for 25-30 minutes, turning regularly.
4) Remove the lid and add the remaining butter, garlic, parsley and lemon juice.
5) Take the frying pan off the heat and leave the flavors to infuse for about minutes before serving. Serve with fried rice and your favorite veggie.

Curried Chicken Legs with Carrots, & Lime

Love Curry? Here's the easiest, quickest, & yummiest curry recipe.

Ingredients:

6-8 chicken legs
1 tablespoon curry powder
2 pounds carrots, cut into 2-inch lengths
2 limes, zest slivered and juice squeezed

Directions:

1) Set oven to Low Broil.
2) Place chicken in baking dish, season with curry powder, salt, and pepper. Scatter carrots around chicken.
3) Roast, occasionally brushing chicken and tossing carrots with pan drippings, until chicken is cooked. Approximately 1-1.5 hrs.
4) Transfer chicken to a plate. Sprinkle lime juice over carrots. Serve with rice.

 * Makes 2-3 servings.

Papou's Grilled Potatoes

Thanks to Papou who came all the way from the East Coast and made us supper on Tuesday night. This easy and quick Potato recipe is good when you don't have time to make mashed potatoes or if you're sick of having baked/microwaved potatoes.

Ingredients:

1 medium potato
Sliced onions (depends on how much onions you want)
1 tsp plive oil
Pinch of salt & pepper

Directions:

1) Rub oil on a square foot of foil.
2) Add sliced potatoes & onions.
3) Sprinkle with salt ang pepper.
4) Wrap the foil up and grill for 25-30 mins.

* Make as many potatoes as you need.
1 wrapped potato is usually good for 1 person.

Chicken in Tomato and Zucchini sauce

Daddy finally picked a dish to add into our virtual cookbook. We all liked this recipe. I think the key to this one is my two buck chuck.



Ingredients:

2 tablespoons olive oil
2 cloves minced garlic
2 tablespoons scallions
1 lb.skinned, boned chicken breast cut into strips
1 teaspoon fresh basil
1 teaspoon dried oregano
1 cup chopped tomatoes
1/2 cup tomato juice
1/2 cup chicken broth
1/2 cup white wine
salt to taste
2 medium zucchini, sliced
2 tablespoon parmesan cheese
1/2 cup grated cheese

Directions:

1) Heat oil. Saute garlic & scallions. Add chicken, basil & oregano and saute 7 minutes or until
chicken is done. Remove chicken from skillet and set aside.
2) Add tomatoes and next 4 ingredients. Bring to a boil. Add Zucchini and Chicken.
3) Add parmesan cheese when zucchini is done. Don't overcook zucchini.
4) Serve on top of Penne pasta.

Gnocchi Alla Sorrentina

Up for a very quick Italian meal?
I grabbed a couple packages of Gnocchi Alla Sorrentina with Tomato Sauce & Mozzarella Cheese at Trader Joe's today and it indeed saved me a lot of time and money. It's yummy too!

Gnocchi is made from dehydrated potatoes and wheat starch.



1 package is 1 lb. (only $2.99) and serves 3. But I bought a couple and 3 of us ate it all. I just add a couple tbsp of water and stir gently for 7 minutes on stove. Serve with salad and garlic bread.

Definitely worth a try.

Pork and Tomatoes

It's tomato season again! We're trying to use up all those tomatoes from Papa's garden so tonight I made this simple recipe. Pork Loin and Tomatoes. Quick, Simple, and Tomatoeeeeeeee. And the Daddy liked it a lot!

Ingredients:

2 tablespoons olive oil
4 boneless pork loin chops
1 small onion, sliced
1 teaspoon sugar
1/4 teaspoon chili powder
1/4 teaspoon red pepper flakes
1 teaspoon dried oregano
6 Fresh tomatoes
salt and pepper to taste

Directions:

1) Season pork chops with salt and pepper. Grill.
2) Saute onions with oil. Mix in the sugar, chili powder, red pepper flakes, and oregano.
3) Stir in the tomatoes and bring to a boil. Uncover and reduce heat to let some water evaporate. Add salt and pepper to taste.
4) Serve Pork chops with sauce on top.
