Kara's Crinkles

Kara is my pretty little chocoholic niece who helped me made these awesome Crinkles for the first time. And as always, we cheat those little sweet toothed friends by using just the right amount of sugar.

Ingredients

  • 1  cup unsweetened cocoa (I buy mine at Trader Joe's)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup semi sweet chocolate chunks (from Trader Joe's)
  • 1/2 cup confectioner's sugar

  • Directions:
    1.) Mix together cocoa, sugars, and oil. Beat in eggs one at a time, then add the rest of the ingredients one by one while mixing.
    2.) Cover dough and chill for at least 4 hours
    3.) Roll dough into one inch balls. Coat each ball in confectioners' sugar and place them onto cookie sheets.
    4.) Bake at 350F for 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

    Bella's Chocolate Cupcake

    Bella's Chocolate Cupcake has 1 cup less sugar and 1/2 cup less butter than most recipe's. Just because we love our little ones and we wanted to give them treats once in a while. Bella loves it so much that whenever we make them, she brings one to school everyday until they're gone.

    Ingredients:
    • 3 1/3 cup flour
    • 1 1/3 cup unsweetened cocoa (I buy mine at Trader Joe's)
    • 2 cups sugar
    • 1 Tbsp baking soda
    • 1 tsp salt
    • 8 oz (2 sticks) melted butter
    • 1 1/2 cup Plain Greek Yogurt
    • 1/2 cup water
    • 1 tsp vanilla
    • 4 large eggs

    Directions:
    1.) Combine all ingredients in a medium mixing bowl adding each ingredient at a time while slowly mixing.
    2.) Scoop batter into baking cups (half filled)
    3.) Bake at 350F for 20-25 minutes. You'll make about 36 regular sized cupcakes.

    Chocolate Chunk Cookies

    Got Chocolate Chunks? Try this soft and sweet cookies ....
    (with way less sugar than most cookie recipes)

    Ingredients:
    • 3 cups flour
    • 1 1/2 tsp baking soda
    • 1 1/2 tsp salt
    • 1 1/4 sticks melted butter
    • 1 cup brown sugar
    • 1/2 cup granulated sugar 
    • 3 eggs
    • 1 1/2 tsp vanilla
    • 1 cup Trader Joe's Semi Sweet Chocolate Chunks

    Directions:
    1.) Combine all ingredients in a medium mixing bowl adding each ingredient at a time while slowly mixing with a fork.
    2.) Scoop 1/4 cup batter for each cookie and place them on battered baking sheet.
    3.) Bake at 375F for 10-13 minutes. You'll make about medium size 22 cookies.
