Curried Chicken Legs with Carrots, & Lime

Love Curry? Here's the easiest, quickest, & yummiest curry recipe.


6-8 chicken legs
1 tablespoon curry powder
2 pounds carrots, cut into 2-inch lengths
2 limes, zest slivered and juice squeezed


1) Set oven to Low Broil.
2) Place chicken in baking dish, season with curry powder, salt, and pepper. Scatter carrots around chicken.
3) Roast, occasionally brushing chicken and tossing carrots with pan drippings, until chicken is cooked. Approximately 1-1.5 hrs.
4) Transfer chicken to a plate. Sprinkle lime juice over carrots. Serve with rice.

 * Makes 2-3 servings.
